    i buy the frozen crinkle cut chips from Coles and everytime i fry them they still come out mushy.

    someone at work told me to use a bottle of oil and throw them in on high temp\

    but i cant justify financially or healthwise using a bottle of vegetable oil

    is there anyway to cook the chips crispy but healthy?

    Can't financially / healthwise to get vegetable oil.
    But can financially / healthwise buy frozen chips?

    the supermarket doesnt sell cooked chips:)

    i like to have them watching TV on a Saturday night watching reruns of Law n Order,crispy with plenty of chicken salt on them:)

    Not healthy, but if you really are on a tight budget, gutter oil will probably achieve the result.

    Buy an air fryer ...but if you can't afford vegetable oil then this might not be an option.

    Salt - Oven chips are pre-oiled/ adding extra salt can help them crisp up. Cook them on the top tray of your oven, if they're still mushy, finish them off under the grill to crisp them up.

    Even better - buy some potatoes, peel them, lightly oil, salt, oven on 180 - 200, cook for 60 - 40 mins. Healthier & cheaper.

    Agree with Jake - airfryer or Oven either way you're not adding extra oil

    Yes i may buy some potatotoes and cut them up,i never thought of that and brush them with oil and oven them,thankyou :p

    If you want the easy way, you can buy oven cook dozen chips.

    I've been told that the secret to good deep fry chips is to first fry them (not sure how long), take them out and let the oils heat up again, and then put them back in.

    On the first fry, the oil cools down rapidly. On the second fry, the chips are much hotter so the oil cools them much better.

    can confirm. ran a fast food restaurant for awhile and chips used to get the pre-fry followed by a deep fry on a timer (think it was a minute or two for each phase from memory) chips used to consistently come up crispy.

    Double heart attack? Soak them in oil, fry them, take them out, fry them again, take them out then nuke them with duck fat.

    Yeah those $2 frozen chips from Coles.

    Buy the straight chips, not the crinkle cut as the straight chips have less surface area and will absorb less oil.

    A litre of oil is cheap and can be reused many times. Get the stove temperature real high and dump those sucker chips in. Hear them squeal ! At high temp less oil will enter the chips. Salt and enjoy.

    Ok....if you want to throw caution to the wind and be a little naughty one day......and make the best chips on the planet.....

    Pre cook potatoes boil in water, then deep fry in oil, take them out then reheat fryer again and deep fry again.....thrice cooked potatoe chips.....guaranteed crispy and to die for chips

    Yup - that's pretty much the gold standard for fried chips. My grandma used to cook them this way - always loved her chips.

    The more important question is - what type of oil to use!

    Back when I was growing up, I recall using "dripping" (usually lamb tallow) to fry chips - that always made for great flavour.

    As someone who did this for many years in a commercial environment, I can say that MTR's method is pretty accurate for the frozen variety (as they come already water blanched and cooked once in oil). Can also do it for fresh, but takes longer.
    If you want to use fresh potato, the quick version is cut and wash chips (to flush out starch which makes chips stick together when cooking in batches) 'blanch' the chips in oil then remove to allow oil to reach max heat again (about 185 degrees) and put them back in the oil and cook until desired crunch/color. If you have a lot, do them in smaller batches otherwise you run the risk of dropping oil temperature. This will make the chips become soft and limp.
    Also for best flavor as Simon mentioned use dripping, lard, fat. Just don't expect to be doing your health any favors with this kind of oil. Tasty - YES. Health risk - You betcha!
    Best results will come from a deep fryer. The bigger it is, the better it will hold temperature.

    I thought the bad stuff (saturated fats?) increased with re-use of oil?
