Fermented Garlic Cloves

    Hi all,

    It might seem like a strange question for this forum however there are many savvy members here...

    Does anyone know where I can buy fermented (or preserved) garlic cloves in jars? I can't seem to find them anywhere. Happy to buy online from a small retailer (actually that's my preference).

    While I suspect that @Lizzie has hit the nail on the head, there is another form of fermented garlic - more like traditional vegetable fermenting

    For example
    Easy Fermented Garlic — 2 Ingredients & No Starter Needed!

    To buy black garlic, I'd try one of the local markets. I used to see it in Canberra at one of the community markets, rather than at the commercial markets, otherwise they can be bought online.

    What about preserved garlic. Is there a good store to purchase this from?

    What do you mean by "preserved"?

    Garlic, if stored properly, and if you've bought/grown a long storing variety (a hardneck variety such as Italian pink or Rocombole) then it should store 12 months easy.

    Don't go down the path of oil preserved garlic ... can become easily toxic

    Both Geoff and I have provided links to preserved garlic ... which Google can readily find a supplier, and/or is easy to make

    In case you're wondering ... I used to grow organic garlic commercially, and was secretary of the Australia Garlic Industry Assoc

    This part is a little concerning about garlic becoming toxic when preserved in oil.

    About halfway down the page of the link. It's not a risk I'd be prepared to take as there are so many other ways to enjoy garlic

    Hi Lizzie, I just bought a kilo of garlic, seller tells me on pick up that they are last seasons and starting to shoot and to peel the ones shooting and keep in olive oil. It wasn’t really what we were after, thinking it was fresh. What would be the best preservation/storage method to use as a fresh alternative A2A008EA-4743-4C0A-9F7F-0F33CDBE14C6.jpeg

    Yep, spend $600 on materials and build yourself a raised garden bed :rolleyes:
    Mr's Stoffo wanted one, so I built it for her and she planted garlic and chillies (I can't eat either ! :().

    I'm with Geoff ... plant as you can harvest at any time, once it's sprouted, to use as green garlic like you would shallots/leeks (with garlic flavor) and, in a few months, you'll have more fresh garlic than you'll know what to do with. I used to sell loads of "garlic sprouts" to the local restaurants

    Otherwise ... freeze in portion sizes. It'll go mushy when thawed but keeps its flavour which is good for cooking but not if your wanting to use it raw (refer above re planting or below for recipe)

    My personal fav for pickling was in wine ... no good for cooking but super delish straight from the jar or you can dilute it with cheese and crackers. Recipe below ... I'd use either shiraz or port, with red wine vinegar ... and it sold by the vat load

    Perfect! Thanks everyone, I’ll plant most. For some reason I was thinking they needed to be planted by April but I just looked it up and now is the perfect time.
