I'm currently underway in renovating my PPR.
For my bathroom, it is a complete gut so everything will be new, tiles will also be floor to ceiling (no cornices).

My question is do i replace the ceiling with new plasterboard? The old looks fine, can't see any cracks.

The current one is the older style with horsehair and the corner vents.

I wondering, should i just remove it all and change it over now so i don't have worry about it?

Don't think you need to - unless you need to make special considerations for lighting or the exhaust fan. Or are the corner vents the only ventilation for the bathroom?

The corner vents are for some kind of ventilation, but i was going to put in a heat lamp and separate exhaust fan regardless. Those are straight cut a hole and install.

Upon removing the cornices, the gap between the wall and the ceiling is about 60mm.... way too wide and the plaster will need to fill.

Cost to fill, skim, sand is more expensive than me ripping out existing ceiling and them putting one a new one.
