As the title suggests, I and a few mates are planning a roadtrip from Syd to Adl and return this Easter break. Obviously, we have added a few more days to it. We have hired a campervan, so will use the camping grounds on the way for rest.

This is a high level itinerary:
Day 1: Syd to Melb - Stay in Melb for the night and visit surrounds. Leave evening day 2
    Day/Night 2: Melb-Adl - Stay in Adl for 2 days
Day 5: Adl-Hay - Stay in Hay for 1 night.
    Day 6: Hay-Syd - Back to Base

We have not decided on the route to take to the destinations and where to stopover, as in which camping grounds, etc.
    Anyone done that before,
    - have suggestions on what we can do on the way?
    - What we should definitely see and do OR what we can/should skip
    - where are not so crowded and booked out camp grounds

    Any suggestions welcome.

Haven't driven to Sydney but have driven to Canberra and back (via hay as you mention). Stopped at Renmark which was quite a nice spot.

For the Melbourne to Adelaide bit, really depends if you want to see scenery or not. I've driven directly (approx 8 hrs via Horsham etc and there's nothing at all to see the whole way) and via great ocean rd which takes 50% more time but has some magnificent scenery.

Come look at some real estate while you're in adel ;)

@Mumbai what car will you take for the road trip? I have seen in a different forum of landcruiser clocked up a million km on the dash.

The Hume highway(M31) between Syd/Melbourne is extra boring and copers/speed cameras everywhere but the quickest way.
I Rode my motorcycle from Sydney to Melbourne a months back and did half half as in Sydney to Wangaratta via Hume and the rest was inner roads through Whitfield and Mansfield.
Took around 8 hours with 3 stops for fuel and a stretch but might differ in a car. If you go this way, lots of great camping ground around King Valley or the Alpine region if you want to stay there.
I'd add a few more days and take the A1 if i was you!

Do you have to go to Adelaide?

If not, go the scenic route around the coast. Sydney to Eden to Sorrento, Melbourne. Ferry across to Queenscliffe then right around the Great Ocean
    Road to the SA border.

Travel as far as time allows then cut back across country as directly as possible to Sydney.

Or if you have to reach Adelaide, at least try for the coast roads from Melbourne to Adelaide, its spectacular.

Once you get out of Sydney, you should not face much traffic. You will cut across the southern outskirts of Melbourne to the ferry.

The side trip to Cape Otway lighthouse is well worth seeing, often koalas in the trees.

    Enjoy!

We did the 'Sapphire Coast drive' (Between Sydney & Melbourne).
You can easily spend the Easter break in this route.

We did drive Sydney-Melbourne-Adelide and back only because we had two events in Melbourne a week apart. Otherwise, it is a bit crazy to do the whole drive within few days.

Is it an option to fly one way?

Got to have a little time to smell the roses. The scenery is not world beating most of the time so the drive would, well, suck if youre constantly on the road. Personally I'd go down to Melbourne then past Mel along the coast/see the Sisters and head back a different way perhaps. That alone in 6 days sounds hectic.

I probably would go to Melbourne, Great Ocean Road then onto the Grampians. I agree with others...IMO... Trying to do Adelaide too would be pushing it for such a short time.

Nope, no fly option. But, we have not booked any accommodation. We can change the course as we please. Based on the suggestions, we might take it easy and not stretch as far. But then how do I meet @D.T. and @Xenia :)
