I've got a house in Sydney with tiles, probably built 1940 or whereabout. The roof needs a lot of work. It needs
    *Cleaning
*Ridges need to be cleaned, put in with cement and then repointed
    *Valley needs to be replaced
    *Possible cracks?
*Needs a new ventilation (mold issues)
*Gutter needs to be replaced with leaf stopper

Any tips on pricing and how to engage roof restoration companies?

Google them. The call them or email them . Seek their advice on replacememt or repair? You will need to obtain at least 3 quotes and opinions for each option ... Choose one.

If the roof tiles are 80 years old then also consider a new roof and tiles / colourbond options etc Ideally get the timber framing inspected adn new battens are likely inevitable. Otherwise a tile clean, repoint & repaint is just expensive lipstick

Contact a roofing / tiling company perhaps. Consider if the tiles are capable of salvage / reuse too. Old terracotta may be reused with some modern replacements of same profile added. At same time they may also add modern insulation, battens etc. Tiler / roofing specialist can guide and quote options.
