Is there any easy way to sound proof apartment internal walls? As in putting something adhesive on top of existing plasterboard instead of ripping them out?

Not to sound proof as such sorry.

Are the neighbor's late night activities a bit loud
    Or yours

Sound check plaster has more air in it, this helps to reduce noise transmission.
So you could drop the cornice and glue up an additional plaster layer, though it is likely cheaper to remove the existing plaster and insulate properly and re plaster, by the time you trim out the door and window frames.
