thinking of going to Tas for a week over Xmas-NY, with kids.

what are the good places to stay? need a place where we could make simple meals, ( don't feel it is healthy to let kids eat out every meal :()

thought Launceston is pretty centrally located, 3 hrs drive max to anywhere.

We like southern Tassie. if you can find somewhere around Salamanca - older part of Hobart that would be my choice. Constitution Dock, Mt Wellington, Salamanca market, Museum of Old and New Art MONA (a must do) then drive to places like Ross, Port Arthur, Bonorong Wildlife Sanctuary, boat to Bruny Island. I could easily fill a month for you! lol

Launceston is a good spot - there are a couple of local MTB parks, and its not far to Derby :)

when we travelled with kids we used stayz or similar for the same reason as you - food prep and rented apartments or houses. Now, only 2 of us we try and stay on the harbour or the old woolstore apartment hotel.

Do either north or south this Summer, and go back next Summer to do the other end.

Off my head, I would think Southern end has so much for kids -
Bonarong Wildlife Sanctuary Plan Your Visit
Eco boat ride around Bruny island
Port Arthur with ghost tour (allow two days)
Mt Wellington - will probably snow
    Mona
main harbour in Hobart - you will be welcome to go aboard some of the yachts
    Tree walk Huon Valley
    Russell Falls
The Veggie Garden from Gardening Australia in Hobart

    North -
    Cradle Mountain National Park
Little Fairy Penguins (Georgetown I think)
    Mole Creek Caves
    Beaconsfield Gold Mine

Being Peak time, family accommodation may already be booked out. We usually stay in Cabins so we can cook most of our own meals. In my experience, the best accommodation needs to be booked several months ahead, so you know for next year.
