I've come across a property that interests me but I noticed the sewer is along the back but clearly (from photos and elevation map data) the land slopes towards the front. According to elevation data the slope is 3% towards front. How can the poo even leave the house?

The sewer would just be deeper to allow for the slope.

How deep is the sewer? Mine's similar but for stormwater, the outlet is about 1.5m deep in a drain.

Makes sense - they would have to bury the pipe deeper than the slope and then some

I'm so used to determining the land slope by looking at the sewer pipe location - 95% of times it corresponds to land slope

3% is pretty much flat to. It's the minimum grade for 150 sewer for your future reference;)

Based on ancient design principles discovered by the Egyptians, the supervising plumber was located in the house when the apprentice dug the trench to the sewer junction. This ensures that the 5#!+ doesn't flow up hill.
