    OK - this is feeds 8 because I got the big slow cooker and will freeze the leftovers.
    Divide by 2 or 4 if you don't want so much :
    • soak 500g chickpeas overnight - or pressure cook :)
    • In the morning, In a large saucepan or slow cooker, Saute 2 large onions, 4 cloves of garlic :eek: I used one big one - and 1 tbspn fresh ginger in 2 tbspns oil.
    • Add spices
    4 cloves (woops forgot)
    1 cinnamon stick
    1 tspn ground chilli powder
    3 tspns ground coriander
    3 tspns ground cumin (yum)
    1 tbspn brown mustard seeds
    • Saute til fragrant, stirring occasionally.
    • Add 3 cans diced tomatoes and 875ml chicken stock. It also says 2 tbspns brown sugar but I really don't see why that's necessary - I didn't use it.
    • Season w/ salt and pepper.
    • Drain and Rinse chickpeas and add to pot.
    • Cook on low for 8 - 10 hours or high for 2 to 4 hours or until chickpeas are tender. This is in a slow cooker. I did low but there was a bit too much liquid at the end. Should've cooked a couple more hours.
    • After this, add 750g sweet potato and cook for another hour or two.
    • Just before serving stir through 250ml coconut milk (optional) and chopped fresh coriander.
    • Hope you enjoy it.

    I might have missed it, but didn't see any meat or animal products in there.
    What do you call this type of "food" ?
